This is the kind of fakeaway that hits every craving at once - sticky, sweet, a little bit spicy, and packed with protein. Honey BBQ beef over egg-fried savoury rice with tenderstem broccoli, and it's all done in about 15 minutes.
I use packets of savoury chicken rice to keep it quick and easy, but it tastes like you've been at the hob for ages. It's a proper midweek winner. Here's how to make it.
Honey BBQ Chilli Beef Fried Rice
Prep 5 min | Cook 15 min | Serves 4 | 431 kcal | 28.6g protein
Ingredients
- 350g 5% fat beef mince
- 2 packets of savoury chicken rice (I used Aldi's)
- 3 eggs
- 3 tbsp BBQ sauce
- 30g honey
- 1 onion, diced
- 100g tenderstem broccoli, chopped
- 3 tbsp soy sauce
- 1 tsp ginger puree
- 1 tsp garlic puree
- 1 tbsp ketchup
- 3 tbsp reduced sugar sweet chilli sauce
- Pinch of chilli flakes
Method
- Fry the mince in a few sprays of oil until browned, then add the onion to cook.
- Mix together the BBQ sauce, honey, soy sauce, ketchup, sweet chilli sauce, garlic puree, ginger puree and chilli flakes in a bowl, then add to the mince and stir.
- Let it simmer until it thickens.
- Meanwhile, in another pan, fry the rice and the broccoli in a few sprays of oil for a few minutes.
- Make a well in the middle of the rice and crack the eggs into it, stirring until cooked, then mix together with the rice.
- Serve the fried rice evenly into four bowls and top with the beef. Enjoy!
FAQs
Can I use a different rice?
Yes - any microwave savoury rice works, or use 2 cooked portions of your own rice with a stock cube stirred through.
Is it high protein?
It is - with the beef mince and eggs it comes in around 28g of protein per serving.
Can I make it ahead?
Yes, it reheats really well. Keep it in the fridge for up to 3 days and heat through in a pan or the microwave.
