Creamy Cajun Chicken Pasta

A creamy, mildly spiced pasta that comes together in half an hour. A proper date-night or fast weeknight dinner.

Ingredients

  • 200g chicken breast, sliced into strips
  • 1/2 yellow pepper, sliced
  • 1/2 red pepper, sliced
  • 1 onion, sliced
  • 1.5 tbsp Cajun seasoning
  • 1 tsp garlic purée
  • 1 tbsp tomato purée
  • 200ml chicken stock (1/2 stock pot & boiling water)
  • 80g reduced fat soft cheese
  • 180g dried pasta
  • 10g Parmesan to serve

Method

  1. Start by frying the onion in a little spray oil.
  2. Once the onion is starting to turn translucent, add peppers and the garlic purée, stir together.
  3. Now add 1 tbsp of the Cajun seasoning, stir together for a minute or so, then add the tomato purée, stir again.
  4. Now add the chicken and seal on all sides, then add in the stock and some black pepper, let it start to reduce down for 5 minutes.
  5. Meanwhile, cook your pasta until nearly cooked but not fully, drain, saving some of the pasta water to loosen up the sauce later.
  6. Add the pasta to the pan with the chicken and peppers, let it simmer for 5 mins or until chicken is cooked through and stock has reduced down, then add in the soft cream cheese, stir together well and add a splash of pasta water if needed to help it along.
  7. Serve between two bowls and add a sprinkle of Parmesan on top, enjoy!
