Creamy Cajun Chicken Pasta

A creamy, mildly spiced pasta that comes together in half an hour. A proper date-night or fast weeknight dinner.
Ingredients
- 200g chicken breast, sliced into strips
- 1/2 yellow pepper, sliced
- 1/2 red pepper, sliced
- 1 onion, sliced
- 1.5 tbsp Cajun seasoning
- 1 tsp garlic purée
- 1 tbsp tomato purée
- 200ml chicken stock (1/2 stock pot & boiling water)
- 80g reduced fat soft cheese
- 180g dried pasta
- 10g Parmesan to serve
Method
- Start by frying the onion in a little spray oil.
- Once the onion is starting to turn translucent, add peppers and the garlic purée, stir together.
- Now add 1 tbsp of the Cajun seasoning, stir together for a minute or so, then add the tomato purée, stir again.
- Now add the chicken and seal on all sides, then add in the stock and some black pepper, let it start to reduce down for 5 minutes.
- Meanwhile, cook your pasta until nearly cooked but not fully, drain, saving some of the pasta water to loosen up the sauce later.
- Add the pasta to the pan with the chicken and peppers, let it simmer for 5 mins or until chicken is cooked through and stock has reduced down, then add in the soft cream cheese, stir together well and add a splash of pasta water if needed to help it along.
- Serve between two bowls and add a sprinkle of Parmesan on top, enjoy!
