Creamy Sweet Chilli Halloumi & Pepperoni Linguine

One pan of golden halloumi, crispy pepperoni and a creamy sweet chilli sauce, tossed through linguine in 20 minutes.

If you love a bit of everything on your plate, this is the pasta for you. Golden fried halloumi, crispy pepperoni and a creamy sweet chilli sauce all tangled through linguine - it tastes like a proper treat but it's on the table in about 20 minutes.

It's become one of the most-requested dinners in my house, and it's dead easy to make. Everything happens in one frying pan, so there's barely any washing up either. Here's how to make it.

Creamy Sweet Chilli Halloumi & Pepperoni Linguine

Prep 5 min  |  Cook 20 min  |  Serves 4  |  553 kcal  |  28g protein

Ingredients

  • 300g dried linguine
  • 225g block of halloumi, sliced
  • 120g sliced pepperoni
  • 1 small red onion, finely diced
  • 1/2 orange pepper, finely diced
  • 1 tsp garlic puree
  • Pinch of chilli flakes
  • 1 tbsp sweet chilli sauce
  • 80ml single cream (I used Elmlea)
  • 15g Parmesan
  • 1 sliced spring onion

Method

  1. Cook the linguine according to the packet instructions, then drain and set aside, saving a splash of the pasta water for later.
  2. Spray some oil into a frying pan and fry the halloumi until golden, turning it over halfway.
  3. Remove the halloumi and set aside, then fry the pepperoni in the same pan for a minute and remove.
  4. Add the pepper, onion, garlic, chilli flakes and a pinch of salt and pepper into the same pan (it should have a little oil left from the pepperoni) and stir to soften.
  5. Once softened, add the sweet chilli sauce, cream and Parmesan and let it simmer for a minute.
  6. Add the halloumi and pepperoni back in along with the cooked linguine and a splash of pasta water, and make sure everything is warmed through.
  7. Top with the sliced spring onion and a little more Parmesan if you like. Enjoy!
Hayley's top tip: This is also delicious with chorizo instead of pepperoni!

FAQs

Can I swap the pepperoni?

Yes - chorizo works brilliantly here and gives it a lovely smoky flavour.

What cream should I use?

I use single cream (Elmlea) to keep it lighter, but any single or double cream will work. Add a splash of pasta water if it needs loosening.

Can I make it ahead?

It's best fresh as halloumi firms up when cold, but leftovers keep in the fridge for a day and reheat gently in a pan with a splash of water.
